Lately, I have been making many different types of grain based salads and pasta salads; like couscous, quinoa, and even orzo. By cooking with recipes, recreating restaurant recipes based on taste, and getting ideas from cooking shows I created a dish named ShrooomZo. It is something I made based on feel so I have been trying to it pin down to write a recipe for it for about a month. The problem I am having is that I don’t want to make it every night since I don’t want my husband to get sick of it.
Ingredients
Wheat Orzo – 1.5 cups cooked
Garlic Clove
1 package of Mushrooms (into .5″ pieces)
small Onion
1 tb of Butter or Margarine
1tb of Soy Sauce
1tb of Balsamic Vinegar
2 tb of Water
1/4 teaspoon of Pepper
1/4 teaspoon of Miss Dash
pinch of Salt
1 bunch of Cilantro
4 oz. of Feta Cheese
How to make Shroomzo
Cook and strain Wheat Orzo as directed.
Chop up the Onion and Mushrooms. Crush and chop the Garlic. In a large saucepan melt the Butter, add the Soy Sauce, Balsamic Vinegar and Water. To the pan add the Mushrooms and Onion. Cook until the liquid is reduced by half. Sprinkle the Salt, Pepper and Miss Dash over the Onion/Mushroom mixture.
Chop up the Cilantro. Add the Cilantro and Feta Cheese it to the bottom of your serving dish. Add the Steaming hot strained Orzo to the serving dish. Spoon over the Onion/Mushroom mixture adding as much sauce, as you would like. Mix the Orzo well until all ingredients are combined.
Shrooomzo is the perfect side dish for a balanced diet.
